Ingredients
- For the crust:

- For the filling:
- 1 cup fresh or frozen blackberries
- 2 large eggs
- 3/4 cup granulated sugar
- 1/4 cup all-purpose flour
- 1 teaspoon vanilla extract
- 1/2 cup shelled pistachios, roughly chopped
- Optional: powdered sugar for dusting
Instructions
- Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a bowl, combine flour, softened butter, sugar, and salt until a soft dough forms.
- Press the dough evenly into the bottom of the prepared pan.
- Bake the crust for 12–15 minutes until lightly golden. Remove from oven.
- In another bowl, whisk eggs and sugar until smooth.
- Stir in flour and vanilla extract until fully combined.
- Gently fold in blackberries and chopped pistachios.
- Pour the filling evenly over the pre-baked crust.
- Return to the oven and bake for 25–30 minutes, until the center is set and no longer jiggly.
- Allow bars to cool completely before slicing.
- Dust with powdered sugar if desired before serving.
