Description

Ingredients

  • For the crust:
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • Pinch of salt
  • For the filling:
  • 1 cup fresh or frozen blackberries
  • 2 large eggs
  • 3/4 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/2 cup shelled pistachios, roughly chopped
  • Optional: powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, combine flour, softened butter, sugar, and salt until a soft dough forms.
  3. Press the dough evenly into the bottom of the prepared pan.
  4. Bake the crust for 12–15 minutes until lightly golden. Remove from oven.
  5. In another bowl, whisk eggs and sugar until smooth.
  6. Stir in flour and vanilla extract until fully combined.
  7. Gently fold in blackberries and chopped pistachios.
  8. Pour the filling evenly over the pre-baked crust.
  9. Return to the oven and bake for 25–30 minutes, until the center is set and no longer jiggly.
  10. Allow bars to cool completely before slicing.
  11. Dust with powdered sugar if desired before serving.

  • Frozen blackberries can be added directly without thawing to prevent excess moisture.
