Ingredients
- 1 lb boneless, skinless chicken breasts or thighs, diced
- 1 cup pineapple chunks (fresh or canned, drained)
- 3 cups cooked white or jasmine rice
- 1 cup chopped bell peppers (red, orange, or yellow)
- 1/4 cup sliced green onions
- 2 cloves garlic, minced
- 3 tbsp soy sauce
- 2 tbsp honey
- 1 tbsp rice vinegar or lime juice
- 1 tsp grated fresh ginger or 1/2 tsp ground ginger
- 1 tsp cornstarch mixed with 1 tbsp water
- 2 tbsp olive oil or sesame oil
- Salt and pepper to taste
Instructions
- Heat oil in a large skillet over medium-high heat. Add diced chicken, season with salt and pepper, and cook until browned and fully cooked. Remove and set aside.
- In the same skillet, add more oil if needed, then sauté garlic, bell peppers, and green onions until slightly softened.
- Add pineapple chunks and cook until lightly caramelized.
- In a bowl, whisk together soy sauce, honey, vinegar or lime juice, ginger, and cornstarch slurry.
- Pour the sauce into the skillet and simmer until thickened.
- Return chicken to the skillet and toss to coat with sauce.
- Serve over cooked rice and garnish with extra green onions or sesame seeds if desired.
Notes
- Use tamari instead of soy sauce to make it gluten-free.
- Add extra veggies like snap peas or broccoli for more nutrition.
- Can be made with shrimp instead of chicken.
- For a tropical twist, add shredded coconut or pineapple juice to the sauce.
