Description

Tropical Pineapple Chicken & Rice Delight is a vibrant, sweet-and-savory dish featuring juicy pineapple, tender chicken, colorful bell peppers, and a tropical sauce, all served over fluffy rice for a satisfying and refreshing meal.


Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs, diced
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 3 cups cooked white or jasmine rice
  • 1 cup chopped bell peppers (red, orange, or yellow)
  • 1/4 cup sliced green onions
  • 2 cloves garlic, minced
  • 3 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar or lime juice
  • 1 tsp grated fresh ginger or 1/2 tsp ground ginger
  • 1 tsp cornstarch mixed with 1 tbsp water
  • 2 tbsp olive oil or sesame oil
  • Salt and pepper to taste

Instructions

  1. Heat oil in a large skillet over medium-high heat. Add diced chicken, season with salt and pepper, and cook until browned and fully cooked. Remove and set aside.
  2. In the same skillet, add more oil if needed, then sauté garlic, bell peppers, and green onions until slightly softened.
  3. Add pineapple chunks and cook until lightly caramelized.
  4. In a bowl, whisk together soy sauce, honey, vinegar or lime juice, ginger, and cornstarch slurry.
  5. Pour the sauce into the skillet and simmer until thickened.
  6. Return chicken to the skillet and toss to coat with sauce.
  7. Serve over cooked rice and garnish with extra green onions or sesame seeds if desired.

Notes

  • Use tamari instead of soy sauce to make it gluten-free.
  • Add extra veggies like snap peas or broccoli for more nutrition.
  • Can be made with shrimp instead of chicken.
  • For a tropical twist, add shredded coconut or pineapple juice to the sauce.
