Ingredients
- 1 3/4 cups all-purpose flour
- 2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup milk or buttermilk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water or hot coffee
Instructions
- Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or a 9×13-inch pan.
- In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- In a separate bowl, beat eggs, milk, oil, and vanilla until well combined.
- Pour wet ingredients into dry ingredients and stir just until combined.
- Slowly add hot water or coffee, stirring gently. The batter will be thin.
- Divide batter evenly into prepared pans and bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
- Let cakes cool in pans for 10 minutes, then transfer to wire racks to cool completely before frosting.
Notes
- Use dark cocoa or add espresso powder for deeper flavor.
- Stir in chocolate chips or chopped chocolate for added richness.
- Layer with raspberry jam or peanut butter frosting for variation.
- To make cupcakes, bake for 18–22 minutes instead.
- Freeze unfrosted layers for up to 2 months, wrapped well.
