Description

A comforting Mediterranean-style casserole made with tender chicken, sautéed zucchini, rich tomato sauce, and melted mozzarella and feta cheese.


Ingredients

  • 2 medium zucchini, sliced
  • 2 cups cooked chicken breast, shredded or diced
  • 1 tablespoon olive oil
  • 1 cup marinara sauce
  • 1/2 cup diced tomatoes
  • 1/2 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded mozzarella cheese
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped red onion
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
  2. Heat olive oil in a skillet over medium heat and sauté the sliced zucchini for a few minutes until slightly softened.
  3. In a mixing bowl, combine the cooked chicken, marinara sauce, diced tomatoes, garlic powder, oregano, basil, salt, and black pepper.
  4. Arrange the sautéed zucchini in the bottom of the prepared baking dish.
  5. Spread the chicken and tomato mixture evenly over the zucchini layer.
  6. Sprinkle shredded mozzarella and crumbled feta cheese over the top.
  7. Add the chopped red onion evenly across the casserole.
  8. Bake for 25–30 minutes until the cheese is melted and lightly golden.
  9. Remove from the oven and sprinkle chopped fresh parsley on top before serving.

Notes

  • Sliced olives or sun-dried tomatoes add extra Mediterranean flavor.
  • Provolone or Parmesan can be used along with mozzarella for deeper flavor.
  • Chopped spinach or bell peppers can be added for additional vegetables.
  • Sautéing the zucchini helps reduce excess moisture in the casserole.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • Reheat in the microwave or in a 350°F (175°C) oven for 10–15 minutes.
  • The fully cooked casserole can be frozen for up to 2 months and thawed before reheating.
