Description

Ingredients

  • 1.5 lbs potatoes (Yukon gold or russet), peeled and diced
  • 68 garlic cloves, minced (or more for stronger flavor)
  • 1 medium onion, chopped
  • 2 tbsp olive oil or butter
  • 4 cups vegetable or chicken broth
  • 1/2 cup milk or cream (optional)
  • Salt and black pepper, to taste
  • 2 tbsp fresh parsley or thyme, chopped
  • Optional: 1 tbsp lemon juice or a dash of hot sauce

Instructions

  1. In a large pot, heat olive oil or butter over medium heat. Add onions and garlic, and sauté until soft and fragrant, about 5 minutes.
  2. Add diced potatoes and pour in enough broth to just cover them.
  3. Bring to a boil, then reduce heat and simmer for 15–20 minutes, until potatoes are tender.
  4. Use an immersion blender to blend the soup until smooth. For a chunkier texture, blend partially or mash by hand.
  5. Stir in milk or cream if using, and season with salt and pepper to taste.
  6. Add fresh herbs and optional lemon juice or hot sauce for extra brightness and recovery benefits.
