Ingredients
- 1.5 lbs potatoes (Yukon gold or russet), peeled and diced
- 6–8 garlic cloves, minced (or more for stronger flavor)
- 1 medium onion, chopped
- 2 tbsp olive oil or butter
- 4 cups vegetable or chicken broth
- 1/2 cup milk or cream (optional)
- Salt and black pepper, to taste
- 2 tbsp fresh parsley or thyme, chopped
- Optional: 1 tbsp lemon juice or a dash of hot sauce
Instructions
- In a large pot, heat olive oil or butter over medium heat. Add onions and garlic, and sauté until soft and fragrant, about 5 minutes.
- Add diced potatoes and pour in enough broth to just cover them.
- Bring to a boil, then reduce heat and simmer for 15–20 minutes, until potatoes are tender.
- Use an immersion blender to blend the soup until smooth. For a chunkier texture, blend partially or mash by hand.
- Stir in milk or cream if using, and season with salt and pepper to taste.
- Add fresh herbs and optional lemon juice or hot sauce for extra brightness and recovery benefits.
- Serve warm, garnished with more herbs or toppings of choice.
