Description

Ingredients

  • 4 cups mixed spring greens (baby spinach, arugula, lettuce)
  • 1/2 cup goat cheese, crumbled
  • 1 cup strawberries, sliced
  • 1/2 cup blueberries or raspberries
  • 1/4 cup toasted almonds or pecans
  • 1/4 red onion, thinly sliced
  • 1/2 cucumber, sliced
  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar or lemon juice
  • 1 teaspoon honey (optional)
  • Salt and pepper, to taste

Instructions

  1. Wash and dry the mixed greens thoroughly.
  2. In a large salad bowl, gently toss the greens.
  3. Add sliced strawberries, blueberries or raspberries, cucumber, and red onion.
  4. Sprinkle crumbled goat cheese and toasted nuts over the top.
  5. In a small bowl, whisk together olive oil, balsamic vinegar or lemon juice, and honey if using.
  6. Drizzle the dressing over the salad.
  7. Toss lightly to coat ingredients evenly.
  8. Serve immediately to keep the greens crisp and the fruit fresh.
