Description
Taco Tater Tot Casserole combines all the flavors of taco night with the comfort of a baked casserole. It features seasoned ground meat, melty cheese, and a golden layer of crispy tater tots, all baked together for a hearty, family-friendly meal.
Ingredients
- 1 lb ground beef or ground turkey
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning (or 2 tbsp homemade)
- 1 cup tomato sauce or salsa
- 1/2 cup black beans or corn (optional)
- 1 1/2 cups shredded cheddar or Mexican blend cheese
- 1 (32 oz) bag frozen tater tots
- Salt and pepper, to taste
- 1 tbsp olive oil
- Optional toppings: sour cream, green onions, jalapeños, avocado, cilantro, hot sauce
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- In a skillet over medium heat, heat oil and cook onion and garlic until softened.
- Add ground meat and cook until browned. Drain excess fat.
- Stir in taco seasoning and tomato sauce or salsa, plus black beans or corn if using. Simmer for 5 minutes.
- Spread meat mixture evenly in the baking dish and sprinkle with shredded cheese.
- Top with a single layer of frozen tater tots.
- Bake uncovered for 30–35 minutes until tater tots are golden and crispy.
- Let cool slightly, then top with desired garnishes and serve.
