Description

Taco Tater Tot Casserole combines all the flavors of taco night with the comfort of a baked casserole. It features seasoned ground meat, melty cheese, and a golden layer of crispy tater tots, all baked together for a hearty, family-friendly meal.


Ingredients

  • 1 lb ground beef or ground turkey
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or 2 tbsp homemade)
  • 1 cup tomato sauce or salsa
  • 1/2 cup black beans or corn (optional)
  • 1 1/2 cups shredded cheddar or Mexican blend cheese
  • 1 (32 oz) bag frozen tater tots
  • Salt and pepper, to taste
  • 1 tbsp olive oil
  • Optional toppings: sour cream, green onions, jalapeños, avocado, cilantro, hot sauce

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, heat oil and cook onion and garlic until softened.
  3. Add ground meat and cook until browned. Drain excess fat.
  4. Stir in taco seasoning and tomato sauce or salsa, plus black beans or corn if using. Simmer for 5 minutes.
  5. Spread meat mixture evenly in the baking dish and sprinkle with shredded cheese.
  6. Top with a single layer of frozen tater tots.
  7. Bake uncovered for 30–35 minutes until tater tots are golden and crispy.
  8. Let cool slightly, then top with desired garnishes and serve.
