Description

Taco Bell Mexican Pizza is a homemade take on the fast-food favorite, layering seasoned beef, refried beans, crispy tortillas, melty cheese, and fresh toppings into a fun and flavorful meal.

Ingredients

  • 1 lb ground beef
  • 2 tbsp taco seasoning (store-bought or homemade)
  • 1/4 cup water
  • 1 can (15 oz) refried beans
  • 8 small flour tortillas (68 inches)
  • 1 cup enchilada sauce or taco sauce
  • 1.5 cups shredded Mexican cheese blend
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced black olives
  • 2 green onions, chopped
  • Oil for frying or brushing tortillas

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cook ground beef in a skillet over medium heat until browned. Drain excess fat.
  3. Add taco seasoning and water to beef, stir, and simmer until thickened. Set aside.
  4. In a small pot, warm refried beans until soft and spreadable.
  5. Fry tortillas in a little oil or brush with oil and bake until golden and crisp on both sides. You can also air-fry at 375°F for 3–4 minutes per side.
  6. To assemble, spread refried beans on one crisp tortilla. Add a layer of seasoned beef.
  7. Top with another crisp tortilla. Spread a spoonful of enchilada or taco sauce on top.
  8. Sprinkle with cheese, diced tomatoes, olives, and green onions.
  9. Place pizzas on a baking sheet and bake for 8–10 minutes, or until cheese is melted and bubbly.
  10. Slice and serve immediately.

Notes

  • Make it vegetarian by skipping beef and doubling the beans and cheese.
  • Use shredded chicken or ground turkey instead of beef for a variation.
  • Add jalapeños or spicy taco sauce for heat.
  • Top with sour cream, guacamole, or hot sauce after baking.
  • For crispier results, assemble and bake pizzas just before serving.
