Ingredients
- 8 oz rice noodles or egg noodles
- 1 lb beef sirloin or flank steak, thinly sliced against the grain
- 2 tbsp cornstarch
- 2 tbsp vegetable oil, divided
- 2 tbsp soy sauce
- 1 tbsp dark soy sauce (optional for color and richness)
- 2 tbsp hoisin sauce
- 1 tbsp oyster sauce
- 1 tbsp brown sugar
- 1 tbsp rice vinegar
- 3 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 1/2 tsp crushed red pepper (optional)
- 2 green onions, sliced (for garnish)
Instructions
- Cook noodles according to package instructions. Drain and set aside.
- Toss sliced beef with cornstarch in a bowl until evenly coated.
- Heat 1 tbsp oil in a large skillet or wok over high heat. Sear beef in batches, 1–2 minutes per side, until browned. Transfer to a plate.
- Add remaining oil to the pan. Sauté garlic, ginger, and crushed red pepper for 30 seconds until fragrant.
- Stir in soy sauce, dark soy sauce, hoisin, oyster sauce, brown sugar, and rice vinegar. Simmer 1–2 minutes until slightly thickened.
- Return beef to the pan and toss in the sauce. Add noodles and stir to combine and heat through.
- Garnish with green onions and serve hot.

- Swap beef with chicken, shrimp, tofu, or mushrooms.
- Add veggies like bell peppers, carrots, snap peas, or bok choy.
- Use tamari and gluten-free sauces for a gluten-free version.
