Ingredients
- 1 cup crushed pineapple with juice (canned or fresh)
- 1/3 cup rice vinegar or white vinegar
- 1/3 cup sugar (white or brown)
- 1/3 cup water
- 2 cloves garlic, minced
- 1/2 to 1 tsp red chili flakes (adjust to taste)
- 1 tsp soy sauce (optional)
- 1 tbsp cornstarch
- 2 tbsp water (for slurry)
- Salt, to taste
Instructions
- In a saucepan, combine crushed pineapple, vinegar, sugar, water, garlic, chili flakes, and soy sauce (if using).
- Bring to a gentle boil over medium heat, stirring to dissolve the sugar.
- Mix cornstarch and 2 tbsp water in a small bowl to make a slurry.
- Reduce heat to low and stir in the cornstarch slurry. Simmer for 2–4 minutes until thickened and glossy.
- Taste and adjust sweetness, acidity, or heat as needed.
- Remove from heat and let cool. Sauce will thicken slightly as it cools.
Notes
- Blend for a smoother texture, especially for glazes.
- Add fresh chili, sriracha, or smoked paprika for variation.
- Splash of lime juice or orange zest adds a citrusy twist.
- Use tamari instead of soy sauce for a gluten-free version.
