Description

Ingredients

  • 12 oz penne pasta
  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tbsp olive oil or butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 3/4 cup grated Parmesan cheese
  • 2 oz cream cheese (optional)
  • 1 tsp Italian seasoning
  • Salt and black pepper to taste
  • Fresh parsley, chopped (optional)
  • Red pepper flakes (optional, for heat)

Instructions

  1. Cook penne according to package directions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add chicken, season with salt, pepper, and Italian seasoning, and cook until golden and cooked through. Remove and set aside.
  3. In the same skillet, melt butter and sauté garlic for 1 minute until fragrant.
  4. Pour in chicken broth and heavy cream. Stir to combine.
  5. Add Parmesan and stir until sauce is smooth and slightly thickened. Stir in cream cheese if using.
  6. Return chicken to the skillet and let simmer in the sauce for a few minutes.
  7. Add cooked penne and toss to coat well.
  8. Adjust seasoning, garnish with parsley and red pepper flakes, and serve warm.
