Description

A vibrant summer salad with sweet peaches, juicy blueberries, hearty kale, crunchy nuts, and tangy cheese, all tossed in a light, refreshing dressing.


Ingredients

  • 6 cups fresh kale, stems removed and leaves chopped
  • 2 fresh peaches, sliced
  • 1 cup fresh blueberries
  • 1/3 cup sliced almonds or pecans, toasted
  • 1/3 cup crumbled feta or goat cheese
  • For the dressing: 3 tbsp olive oil, 2 tbsp fresh lemon juice or balsamic vinegar, 1 tbsp honey or maple syrup, 1/4 tsp salt, 1/4 tsp black pepper

Instructions

  1. Wash and chop kale, then massage with 1 tsp olive oil until softened.
  2. Add peach slices, blueberries, toasted nuts, and cheese to the kale.
  3. In a small bowl, whisk together olive oil, lemon juice or balsamic vinegar, honey, salt, and pepper until combined.
  4. Drizzle dressing over salad and toss gently to coat.
  5. Serve immediately or chill for 10–15 minutes before serving.
