Description
A vibrant summer salad with sweet peaches, juicy blueberries, hearty kale, crunchy nuts, and tangy cheese, all tossed in a light, refreshing dressing.
Ingredients
- 6 cups fresh kale, stems removed and leaves chopped
- 2 fresh peaches, sliced
- 1 cup fresh blueberries
- 1/3 cup sliced almonds or pecans, toasted
- 1/3 cup crumbled feta or goat cheese
- For the dressing: 3 tbsp olive oil, 2 tbsp fresh lemon juice or balsamic vinegar, 1 tbsp honey or maple syrup, 1/4 tsp salt, 1/4 tsp black pepper
Instructions
- Wash and chop kale, then massage with 1 tsp olive oil until softened.
- Add peach slices, blueberries, toasted nuts, and cheese to the kale.
- In a small bowl, whisk together olive oil, lemon juice or balsamic vinegar, honey, salt, and pepper until combined.
- Drizzle dressing over salad and toss gently to coat.
- Serve immediately or chill for 10–15 minutes before serving.

- Add grilled chicken or shrimp to make it a main course.
