Description

A light, no-bake strawberry tiramisu made with fresh strawberries, creamy mascarpone, and soft ladyfingers for a refreshing, elegant dessert perfect for warm weather.


Ingredients

  • 1 lb fresh strawberries, sliced
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 package (7 oz) ladyfinger cookies
  • 8 oz mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Wash and slice the strawberries. Place them in a bowl with granulated sugar and lemon juice and let sit for about 15 minutes to release juices.
  2. In a mixing bowl, whip the heavy cream until soft peaks form.
  3. In another bowl, mix the mascarpone cheese with powdered sugar and vanilla extract until smooth.
  4. Gently fold the whipped cream into the mascarpone mixture until light and creamy.
  5. Briefly dip the ladyfingers into the strawberry juices, being careful not to soak them.
  6. Arrange a layer of dipped ladyfingers in the bottom of a serving dish.
  7. Spread a layer of mascarpone cream over the ladyfingers, then add a layer of sliced strawberries.
  8. Repeat the layers until all ingredients are used, finishing with cream and strawberries on top.
  9. Cover and refrigerate for at least 4 hours before serving.

Notes

  • Do not oversoak the ladyfingers to keep layers structured.
  • The dessert tastes even better after resting overnight.
  • Adjust sugar depending on the sweetness of the strawberries.
