Ingredients
- 6 cups baby spinach
- 1 cup fresh strawberries, sliced
- 1/4 red onion, thinly sliced
- 1/3 cup crumbled feta or goat cheese
- 1/4 cup sliced almonds, pecans, or walnuts (toasted)
- Optional: 1/2 avocado, sliced
- Optional: 1/2 cup grilled chicken, sliced
- 1/4 cup olive oil
- 2 tbsp balsamic vinegar (or red wine vinegar)
- 1 tsp Dijon mustard
- 1 tbsp honey or maple syrup
- Salt and black pepper, to taste
Instructions
- In a small bowl or jar, whisk together olive oil, balsamic vinegar, Dijon mustard, honey, salt, and pepper until emulsified.
- In a large bowl, combine spinach, strawberries, and red onion.
- Drizzle dressing over the salad and toss gently to coat.
- Top with crumbled cheese and toasted nuts just before serving.
- Add avocado or grilled chicken if using, and serve immediately.
Notes
- Use arugula instead of spinach for a peppery flavor.
- Blueberries or mandarin oranges can be added for more fruity flair.
- Add cooked quinoa or farro for extra substance.
