Ingredients
- 2 boneless, skinless chicken breasts
- 1 cup fresh strawberries, hulled and sliced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- 1 tablespoon honey
- 1/4 cup chicken broth
- 1/4 cup fresh basil leaves, chopped
- Salt to taste
- Black pepper to taste
Instructions
- Season the chicken breasts with salt and black pepper on both sides.
- Heat olive oil in a large skillet over medium heat and cook the chicken for 5–6 minutes per side until golden and fully cooked.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add minced garlic and cook briefly until fragrant.
- Add strawberries, balsamic vinegar, honey, and chicken broth. Simmer for a few minutes until strawberries soften and the sauce thickens slightly.
- Return the chicken to the skillet and spoon the sauce over it.
- Cook for another 2–3 minutes to combine flavors.
- Sprinkle fresh basil over the top just before serving.
Notes
- Add a splash of lemon juice for extra brightness.
- For a richer sauce, stir in a small knob of butter at the end.
- Chicken thighs can be used instead of breasts for juicier results.
- Add a pinch of chili flakes for subtle heat.
- Fresh basil is recommended for best flavor, but dried can be used if needed.
