Spinach Chicken Alfredo Delight is a rich, creamy pasta dish made with tender chicken, fresh spinach, and a cheesy Alfredo sauce—all cooked in one skillet for a quick and comforting meal.
Ingredients
- 2 boneless, skinless chicken breasts or thighs, sliced
- 2 tbsp olive oil or butter
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 oz cream cheese (optional)
- 3 cups fresh spinach leaves
- 8 oz pasta (fettuccine, penne, or linguine)
- Salt, to taste
- Black pepper, to taste
- 1 tsp Italian seasoning or a pinch of nutmeg (optional)
Instructions
- Cook the pasta according to package directions, reserving 1/2 cup of pasta water. Drain and set aside.
- In a large skillet, heat olive oil or butter over medium heat. Sauté the sliced chicken until golden and fully cooked, seasoning with salt, pepper, and Italian seasoning.
- Remove chicken from skillet. Add more butter if needed and sauté the garlic until fragrant.
- Pour in the heavy cream, then stir in the Parmesan and cream cheese (if using) until the sauce is smooth and creamy.
- Add spinach to the sauce and cook until wilted. Return the chicken to the pan.
- Add the cooked pasta to the skillet, tossing everything together. Loosen the sauce with reserved pasta water if needed.
- Serve hot, topped with extra Parmesan and cracked black pepper.
Notes
- Use rotisserie chicken to save time.
- Add sun-dried tomatoes or mushrooms for extra flavor.
- Substitute half-and-half for a lighter version.
