Description

Spinach and Cheese Puff Pastry Squares are buttery, flaky snacks filled with a creamy, cheesy spinach mixture. These easy-to-make pastries are perfect for parties, brunches, or quick vegetarian lunches.


Ingredients

  • 2 sheets puff pastry, thawed if frozen
  • 1 ½ cups cooked, chopped spinach (moisture squeezed out)
  • 1 cup ricotta cheese (or crumbled feta for a tangy variation)
  • ½ cup shredded mozzarella cheese
  • 1 egg (for filling)
  • Salt and pepper, to taste
  • 1 egg, beaten (for egg wash)
  • Optional: sesame seeds, for topping

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Mix spinach, ricotta or feta, mozzarella, 1 egg, salt, and pepper in a bowl.
  3. Place one puff pastry sheet on the baking sheet. Spread spinach-cheese mixture evenly on top, leaving a small border.
  4. Lay the second pastry sheet on top. Press edges with a fork to seal.
  5. Cut into squares directly on the baking sheet using a sharp knife.
  6. Brush tops with beaten egg. Sprinkle sesame seeds if using.
  7. Bake for 25–30 minutes or until puffed and golden brown.
  8. Let cool slightly and serve warm.

  • Mix in herbs like dill or parsley for freshness.
  • For Mediterranean flavor, use feta and chopped olives.
