Description

Bold and creamy spicy harissa chicken pinwheels made with tender chicken, smoky harissa, and herbs, perfect for parties, snacks, or light lunches.

Ingredients

  • 4 large flour tortillas
  • 2 cups cooked chicken breast, finely chopped or shredded
  • 3 tablespoons harissa paste
  • 6 oz cream cheese, softened
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley or cilantro, chopped

Instructions

  1. Place the chopped or shredded cooked chicken in a bowl.
  2. Add the cream cheese, harissa paste, olive oil, lemon juice, garlic, salt, and black pepper.
  3. Mix until smooth and evenly combined, then stir in the chopped herbs.
  4. Lay the tortillas flat and spread the chicken mixture evenly over each tortilla, reaching the edges.
  5. Roll each tortilla tightly into a log shape.
  6. Wrap the rolls in plastic wrap and refrigerate for at least 30 minutes to firm up.
  7. Slice into even pinwheels using a sharp knife and serve.

Notes

  • Adjust the amount of harissa to control the spice level.
  • Spinach tortillas add extra color and flavor.
  • Slice just before serving for the cleanest pinwheels.
