Ingredients
- 2 English cucumbers or 4 Persian cucumbers, thinly sliced
- 1 tsp salt (for draining cucumbers)
- 2 tbsp rice vinegar
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 2 cloves garlic, minced
- 1/2 tsp red pepper flakes or 1 tsp chili oil
- 1 tsp sugar or honey
- 2 green onions, sliced
- 1 tsp sesame seeds (optional)
Instructions
- Place sliced cucumbers in a colander and sprinkle with salt. Let sit for 10–15 minutes to release moisture.
- In a bowl, whisk together rice vinegar, soy sauce, sesame oil, garlic, red pepper flakes, and sugar or honey.
- Pat cucumbers dry with paper towels and transfer to a mixing bowl.
- Pour dressing over cucumbers and toss to coat evenly.
- Garnish with green onions and sesame seeds.
- Chill for 15 minutes before serving for best flavor.

- Add shredded carrots or red bell peppers for extra color and crunch.
