Description

Slow Cooker Garlic Butter Chicken and Veggies is a cozy one-pot meal made with tender chicken, soft vegetables, and a savory garlic butter sauce. It’s perfect for busy days when you want comfort food with minimal effort.


Ingredients

  • 4 boneless, skinless chicken thighs or breasts
  • 1 lb baby potatoes or chopped Yukon gold potatoes
  • 3 large carrots, peeled and chopped
  • 1 cup green beans (fresh or frozen)
  • 4 cloves garlic, minced
  • 1/4 cup unsalted butter, melted
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • Salt and black pepper, to taste
  • Optional: fresh parsley or thyme for garnish

Instructions

  1. Season chicken with salt, pepper, paprika, and Italian seasoning.
  2. Place potatoes, carrots, and green beans in the bottom of the slow cooker.
  3. Lay the seasoned chicken on top of the vegetables.
  4. In a small bowl, mix melted butter with minced garlic.
  5. Pour the garlic butter evenly over the chicken and vegetables.
  6. Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is cooked through and vegetables are tender.
  7. Garnish with fresh herbs before serving if desired.

Notes

  • Swap in sweet potatoes or butternut squash for a seasonal twist.
  • Add a splash of chicken broth or white wine for extra sauce.
  • Bone-in thighs add more flavor and richness.
  • Skip potatoes and use more green vegetables for a low-carb option.
