Ingredients
- 4 boneless, skinless chicken thighs or breasts
- 1 lb baby potatoes or chopped Yukon gold potatoes
- 3 large carrots, peeled and chopped
- 1 cup green beans (fresh or frozen)
- 4 cloves garlic, minced
- 1/4 cup unsalted butter, melted
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- Salt and black pepper, to taste
- Optional: fresh parsley or thyme for garnish
Instructions
- Season chicken with salt, pepper, paprika, and Italian seasoning.
- Place potatoes, carrots, and green beans in the bottom of the slow cooker.
- Lay the seasoned chicken on top of the vegetables.
- In a small bowl, mix melted butter with minced garlic.
- Pour the garlic butter evenly over the chicken and vegetables.
- Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is cooked through and vegetables are tender.
- Garnish with fresh herbs before serving if desired.
