Ingredients
- 2 lbs stew beef or beef chuck, cut into bite-sized pieces
- 1.5 lbs baby potatoes, halved
- 1/2 cup unsalted butter
- 6 cloves garlic, minced
- 1 tsp onion powder
- 1 tsp Italian seasoning
- 2 tbsp fresh parsley (or 1 tbsp dried), chopped
- Salt and pepper, to taste
- 2 tbsp olive oil (optional, for browning)
- 1/2 cup beef broth (optional, for extra moisture)
Instructions
- Season beef with salt, pepper, onion powder, and Italian seasoning.
- (Optional) Heat olive oil in a skillet over medium-high heat and sear beef on all sides until browned.
- Place beef and halved baby potatoes into the slow cooker.
- Melt butter in a saucepan or microwave-safe bowl. Stir in minced garlic and parsley.
- Pour garlic butter mixture over the beef and potatoes. Add beef broth if desired.
- Cover and cook on low for 6–8 hours or on high for 4 hours, until beef is tender and potatoes are fork-soft.
- Stir gently before serving to coat everything in the garlic butter sauce.
- Garnish with extra parsley and serve warm.

- Browning the beef first adds flavor but is optional.
- Leave potato skins on for texture and ease—just wash them well.
- For a thicker sauce, stir in a cornstarch slurry (1 tsp cornstarch + 2 tsp water) during the last 30 minutes of cooking.
