Description

Slow Cooker Garlic Butter Beef Bites & Potatoes is a hearty and comforting one-pot meal. Tender beef and baby potatoes cook low and slow in a rich garlic butter sauce, making it flavorful, filling, and effortless. Perfect for busy weekdays or cozy weekends.

Ingredients

  • 2 lbs stew beef or beef chuck, cut into bite-sized pieces
  • 1.5 lbs baby potatoes, halved
  • 1/2 cup unsalted butter
  • 6 cloves garlic, minced
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 2 tbsp fresh parsley (or 1 tbsp dried), chopped
  • Salt and pepper, to taste
  • 2 tbsp olive oil (optional, for browning)
  • 1/2 cup beef broth (optional, for extra moisture)

Instructions

  1. Season beef with salt, pepper, onion powder, and Italian seasoning.
  2. (Optional) Heat olive oil in a skillet over medium-high heat and sear beef on all sides until browned.
  3. Place beef and halved baby potatoes into the slow cooker.
  4. Melt butter in a saucepan or microwave-safe bowl. Stir in minced garlic and parsley.
  5. Pour garlic butter mixture over the beef and potatoes. Add beef broth if desired.
  6. Cover and cook on low for 6–8 hours or on high for 4 hours, until beef is tender and potatoes are fork-soft.
  7. Stir gently before serving to coat everything in the garlic butter sauce.
  8. Garnish with extra parsley and serve warm.

Notes

  • Browning the beef first adds flavor but is optional.
  • Leave potato skins on for texture and ease—just wash them well.
  • For a thicker sauce, stir in a cornstarch slurry (1 tsp cornstarch + 2 tsp water) during the last 30 minutes of cooking.
  • Customize with added vegetables like carrots or green beans.
  • Store leftovers in the fridge up to 4 days or freeze for up to 2 months.
