Ingredients
- 2 tbsp butter or olive oil
- 1 small onion, finely chopped
- 1 carrot, diced
- 1 celery stalk, diced
- 2 cloves garlic, minced
- 2 tbsp tomato paste
- 2 tbsp all-purpose flour
- 3 cups seafood or chicken broth
- 1/2 cup dry white wine (like Sauvignon Blanc)
- 1 bay leaf
- 1 tsp Old Bay seasoning or paprika
- Salt and black pepper to taste
- 1 cup heavy cream or half-and-half
- 1/2 cup cooked lobster meat, chopped
- 1/2 cup cooked shrimp, peeled and chopped
- 1/2 cup lump crab meat
- Optional: 1 tbsp lemon juice, 2 tbsp chopped fresh parsley
Instructions
- In a large pot, melt butter over medium heat. Sauté onion, carrot, and celery for 5–6 minutes until soft.
- Add garlic and tomato paste; cook for 1 minute.
- Sprinkle in flour and stir constantly for 1–2 minutes to form a roux.
- Slowly whisk in wine and broth, scraping the pot to deglaze. Add bay leaf, seasoning, salt, and pepper.
- Bring to a simmer and cook for 15–20 minutes until vegetables are tender and broth is slightly thickened.
- Remove bay leaf and blend the soup until smooth using an immersion blender or in batches in a regular blender.
- Return to low heat, stir in cream, then add cooked lobster, shrimp, and crab. Simmer 5–10 minutes until heated through.
- Adjust seasoning and add lemon juice if desired. Serve hot, garnished with parsley or extra seafood.
