Description

This savory creamy mushroom and ground beef bake with cheese is a rich, low-carb casserole made with tender beef, sautéed mushrooms, and a creamy cheese sauce. It’s hearty, satisfying, and perfect for an easy weeknight dinner.


Ingredients

  • 1 lb ground beef
  • 8 oz mushrooms (white or cremini), sliced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 oz cream cheese
  • 1/2 cup heavy cream
  • 1 1/2 cups shredded cheese (cheddar, mozzarella, or blend)
  • 2 tablespoons olive oil or butter
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • Optional: 1 teaspoon Italian seasoning, 1/2 teaspoon paprika, parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a casserole dish.
  2. Heat olive oil in a skillet over medium heat. Sauté onions and garlic until fragrant.
  3. Add mushrooms and cook until browned and tender. Remove from skillet and set aside.
  4. In the same skillet, cook ground beef until browned. Season with salt, pepper, and optional spices. Drain excess fat.
  5. Return mushrooms to the skillet and stir to combine.
  6. Reduce heat and stir in cream cheese and heavy cream until smooth and creamy.
  7. Transfer mixture to casserole dish and top with shredded cheese.
  8. Bake uncovered 15–20 minutes, until cheese is melted and bubbly.
  9. Let rest for 5 minutes before serving. Garnish with parsley if desired.
