Ingredients
- 1 lb boneless chicken breast or thigh, cooked and sliced
- 4 soft tortillas or flatbreads
- 1 bell pepper, thinly sliced
- 1/2 red onion, thinly sliced
- 1 cup lettuce or spinach leaves
- 1/2 cup cherry tomatoes, halved
- 1 tbsp olive oil
- Salt and freshly ground black pepper, to taste
- Optional: avocado slices, cheese (Swiss or cheddar)
- For the Garlic Cream Sauce:
- 2 tbsp butter
- 3 garlic cloves, minced
- 1/2 cup heavy cream (or half-and-half)
- 1/4 cup grated Parmesan cheese
- 1 tbsp fresh parsley or chives, chopped
- Salt and pepper, to taste
Instructions
- Heat olive oil in a skillet over medium heat. Season sliced chicken with salt and pepper and cook until fully done. Remove and set aside.
- In the same skillet, sauté bell pepper and red onion until just tender. Remove and set aside.
- To make the garlic cream sauce: melt butter in a small pan, sauté garlic until fragrant (about 30 seconds), then stir in heavy cream and simmer briefly until it starts to thicken.
- Whisk in Parmesan cheese, and season with salt and pepper. Stir in chopped parsley or chives, then remove from heat.
- Warm tortillas briefly if desired. On each, layer lettuce or spinach, sliced chicken, sautéed veggies, and cherry tomatoes (plus avocado or cheese if using).
- Spoon garlic cream sauce over the fillings, then fold in sides and roll tightly to wrap. Slice in half if preferred and serve immediately.
