Ingredients

  • 1 lb boneless chicken breast or thigh, cooked and sliced
  • 4 soft tortillas or flatbreads
  • 1 bell pepper, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1 cup lettuce or spinach leaves
  • 1/2 cup cherry tomatoes, halved
  • 1 tbsp olive oil
  • Salt and freshly ground black pepper, to taste
  • Optional: avocado slices, cheese (Swiss or cheddar)
  • For the Garlic Cream Sauce:
  • 2 tbsp butter
  • 3 garlic cloves, minced
  • 1/2 cup heavy cream (or half-and-half)
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp fresh parsley or chives, chopped
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil in a skillet over medium heat. Season sliced chicken with salt and pepper and cook until fully done. Remove and set aside.
  2. In the same skillet, sauté bell pepper and red onion until just tender. Remove and set aside.
  3. To make the garlic cream sauce: melt butter in a small pan, sauté garlic until fragrant (about 30 seconds), then stir in heavy cream and simmer briefly until it starts to thicken.
  4. Whisk in Parmesan cheese, and season with salt and pepper. Stir in chopped parsley or chives, then remove from heat.
  5. Warm tortillas briefly if desired. On each, layer lettuce or spinach, sliced chicken, sautéed veggies, and cherry tomatoes (plus avocado or cheese if using).
  6. Spoon garlic cream sauce over the fillings, then fold in sides and roll tightly to wrap. Slice in half if preferred and serve immediately.
