Description

Savory Cabbage Beef Bake is a cozy, budget-friendly casserole that layers seasoned ground beef, tender cabbage, and a rich tomato sauce. It’s a wholesome and hearty meal perfect for any weeknight dinner.

Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 small head green cabbage, chopped
  • 1 (28 oz) can crushed tomatoes or tomato sauce
  • 2 tbsp tomato paste (optional)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried oregano or Italian seasoning
  • 1/2 tsp paprika
  • 2 tbsp olive oil
  • 1 cup shredded cheddar or mozzarella cheese (optional, for topping)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. In a skillet, cook ground beef and chopped onion over medium heat until browned. Add garlic and cook for 1 more minute.
  3. Drain excess fat, then stir in crushed tomatoes, tomato paste (if using), salt, pepper, oregano, and paprika. Simmer for 5–10 minutes.
  4. In a separate pan, sauté chopped cabbage in olive oil for 5–7 minutes, until slightly softened.
  5. Layer half of the cabbage in the bottom of the baking dish, spread the beef mixture evenly over it, and top with the remaining cabbage.
  6. Cover with foil and bake for 30 minutes.
  7. If using cheese, uncover, sprinkle on top, and bake an additional 10–15 minutes until cheese is melted and bubbly.
  8. Let cool for a few minutes before serving.

Notes

  • Add cooked rice or quinoa to the beef for a heartier casserole.
  • Use ground turkey or chicken for a lighter version.
  • Mix in shredded carrots or spinach for more veggies.
  • Diced tomatoes with green chilies add a spicy twist.
  • Skip cheese and grains for a low-carb option.
