Description

A comforting Rustic Country French Style Garlic Soup made with gently simmered garlic, aromatic herbs, rich broth, and finished with egg yolks and Parmesan for a silky, nourishing texture. Simple ingredients create a timeless, cozy dish.

Ingredients

  • 2 tablespoons olive oil or butter
  • 1 whole head of garlic, cloves peeled and thinly sliced
  • 1 small onion, finely chopped
  • 4 cups vegetable or chicken broth
  • 1/2 teaspoon dried thyme
  • Salt to taste
  • Black pepper to taste
  • 2 egg yolks
  • 1/4 cup grated Parmesan cheese
  • 4 slices rustic bread, toasted
  • Optional: fresh parsley for garnish

Instructions

  1. Heat olive oil or butter in a large pot over medium heat.
  2. Add the chopped onion and cook for 4–5 minutes until softened.
  3. Stir in the sliced garlic and cook gently for 2–3 minutes without browning.
  4. Pour in the broth and add dried thyme, salt, and black pepper.
  5. Bring to a gentle simmer and cook for 20–25 minutes to develop flavor.
  6. In a small bowl, whisk together egg yolks and grated Parmesan cheese.
  7. Remove soup from heat and slowly ladle a small amount of hot broth into the egg mixture to temper it.
  8. Gradually stir the tempered egg mixture back into the soup, whisking gently to create a silky texture.
  9. Place a slice of toasted rustic bread into each bowl and ladle hot soup over the top.
  10. Garnish with fresh parsley if desired and serve immediately.

Notes

  • Add a splash of white wine while sautéing garlic for extra depth.
  • For a heartier version, stir in cooked white beans.
  • For a dairy-free option, omit Parmesan and egg yolks.
  • Store leftovers (without bread) in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently over low heat to prevent curdling.
  • Freezing is not recommended due to egg and cheese enrichment.
