Description

A creamy and zesty Rotel ranch boat dip made with cream cheese, cheddar, and ranch seasoning, perfect for a quick and crowd-pleasing appetizer.

Ingredients

  • 200g cream cheese, softened
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 can (280g) Rotel tomatoes, lightly drained
  • 1 packet ranch seasoning mix
  • 2 tbsp green onions, chopped
  • Tortilla chips or crackers, for serving

Instructions

  1. Soften the cream cheese to make mixing easier.
  2. In a mixing bowl, combine cream cheese, sour cream, and ranch seasoning.
  3. Mix until smooth and creamy.
  4. Lightly drain the Rotel tomatoes to remove excess liquid.
  5. Fold in the Rotel tomatoes and shredded cheddar cheese.
  6. Mix until well combined.
  7. Transfer the dip to a serving dish.
  8. Top with chopped green onions.
  9. Refrigerate for about 30 minutes before serving.
  10. Serve with tortilla chips or crackers.

Notes

  • Use mild or spicy Rotel depending on your heat preference.
  • Drain tomatoes well to avoid a watery dip.
  • Add cooked ground beef or sausage for a heartier version.
  • Can be served chilled or slightly softened at room temperature.
  • Try Monterey Jack or pepper jack cheese for variation.
