Description

Roasted strawberry whipped ricotta toast combines creamy whipped ricotta with sweet, caramelized strawberries on crisp toasted bread. It’s a beautiful and delicious dish perfect for brunch, a light snack, or even dessert.


Ingredients

  • 1 cup fresh strawberries, hulled and halved
  • 1 tbsp olive oil or melted butter
  • 1 tbsp honey or maple syrup (for roasting)
  • 1 cup whole milk ricotta cheese
  • 12 tbsp heavy cream or milk (optional)
  • Pinch of salt
  • 4 slices sourdough, baguette, or rustic bread
  • Fresh mint or basil, chopped (optional)
  • Honey or balsamic glaze (for drizzling)

Instructions

  1. Preheat oven to 375°F (190°C). Toss strawberries with olive oil and honey on a baking sheet.
  2. Roast for 20-25 minutes, until soft and slightly caramelized.
  3. Whip ricotta in a food processor or with a hand mixer until smooth and fluffy. Add cream or milk and a pinch of salt if desired.
  4. Toast bread slices until golden and crisp.
  5. Spread whipped ricotta generously on each slice of toast.
  6. Top with warm roasted strawberries and drizzle with honey or balsamic glaze.
  7. Garnish with fresh mint or basil if using. Serve immediately.
