Ingredients
- 1 cup fresh strawberries, hulled and halved
- 1 tbsp olive oil or melted butter
- 1 tbsp honey or maple syrup (for roasting)
- 1 cup whole milk ricotta cheese
- 1–2 tbsp heavy cream or milk (optional)
- Pinch of salt
- 4 slices sourdough, baguette, or rustic bread
- Fresh mint or basil, chopped (optional)
- Honey or balsamic glaze (for drizzling)
Instructions
- Preheat oven to 375°F (190°C). Toss strawberries with olive oil and honey on a baking sheet.
- Roast for 20-25 minutes, until soft and slightly caramelized.
- Whip ricotta in a food processor or with a hand mixer until smooth and fluffy. Add cream or milk and a pinch of salt if desired.
- Toast bread slices until golden and crisp.
- Spread whipped ricotta generously on each slice of toast.
- Top with warm roasted strawberries and drizzle with honey or balsamic glaze.
- Garnish with fresh mint or basil if using. Serve immediately.

- Use lemon zest in ricotta for extra brightness.
