Description
Roadhouse Butter Chicken Skillet is a bold, savory one-pan dish featuring seared chicken coated in a rich, garlicky butter sauce with smoky seasoning. Perfect for a quick and comforting dinner with minimal cleanup.
Ingredients
- 4 boneless, skinless chicken breasts or thighs
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 2 tbsp olive oil or butter (for searing)
- 3 tbsp unsalted butter (for sauce)
- 3 cloves garlic, minced
- 1/2 cup chicken broth or stock
- 1/4 cup heavy cream (optional)
- 1 tbsp fresh parsley or chives, chopped (for garnish)
Instructions
- Season chicken with salt, pepper, smoked paprika, garlic powder, and onion powder.
- Heat oil or butter in a large skillet over medium-high heat. Sear chicken for 5–6 minutes per side until golden and cooked through. Remove and set aside.
- Lower heat to medium and melt butter in the same skillet.
- Add minced garlic and cook for 1–2 minutes until fragrant.
- Pour in chicken broth, scraping up browned bits. Let simmer for a few minutes.
- For a creamier sauce, stir in heavy cream and simmer until slightly thickened.
- Return chicken to skillet and spoon sauce over it. Simmer gently for 2–3 minutes.
- Garnish with chopped parsley or chives before serving.
Notes
- Don’t overcrowd the skillet when searing for best browning.
- Use an instant-read thermometer to check chicken doneness (165°F).
- Adjust seasoning or add hot sauce for extra heat.
- Leftovers reheat well with a splash of broth to refresh the sauce.
