Description

Roadhouse Butter Chicken Skillet is a bold, savory one-pan dish featuring seared chicken coated in a rich, garlicky butter sauce with smoky seasoning. Perfect for a quick and comforting dinner with minimal cleanup.

Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 2 tbsp olive oil or butter (for searing)
  • 3 tbsp unsalted butter (for sauce)
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth or stock
  • 1/4 cup heavy cream (optional)
  • 1 tbsp fresh parsley or chives, chopped (for garnish)

Instructions

  1. Season chicken with salt, pepper, smoked paprika, garlic powder, and onion powder.
  2. Heat oil or butter in a large skillet over medium-high heat. Sear chicken for 5–6 minutes per side until golden and cooked through. Remove and set aside.
  3. Lower heat to medium and melt butter in the same skillet.
  4. Add minced garlic and cook for 1–2 minutes until fragrant.
  5. Pour in chicken broth, scraping up browned bits. Let simmer for a few minutes.
  6. For a creamier sauce, stir in heavy cream and simmer until slightly thickened.
  7. Return chicken to skillet and spoon sauce over it. Simmer gently for 2–3 minutes.
  8. Garnish with chopped parsley or chives before serving.

Notes

  • Don’t overcrowd the skillet when searing for best browning.
  • Use an instant-read thermometer to check chicken doneness (165°F).
  • Adjust seasoning or add hot sauce for extra heat.
  • Leftovers reheat well with a splash of broth to refresh the sauce.
