Ingredients
- 1 sheet puff pastry, thawed
- 4 oz cream cheese, softened
- 2 tbsp granulated sugar
- 1/2 tsp vanilla extract
- 1 egg yolk
- 1 cup fresh strawberries, sliced
- 2 tbsp strawberry jam or preserves (optional, for glaze)
- Powdered sugar, for garnish
Instructions
- Preheat oven to 400°F and line a baking sheet with parchment paper.
- Roll out puff pastry slightly and cut into 6 rectangles or squares. Place on baking sheet.
- Score a smaller rectangle inside each piece and poke the center with a fork.
- Bake for 12–15 minutes until golden and puffed.
- While baking, beat cream cheese, sugar, vanilla, and egg yolk until smooth.
- Remove pastries from oven, gently press down centers, and let cool slightly.
- Spoon cheesecake filling into centers and bake for another 6–8 minutes until set.
- Cool completely, then top with sliced strawberries.
- Warm jam and brush over strawberries if using for glaze.
- Dust with powdered sugar before serving.

- Swap strawberries with raspberries, blueberries, or mixed berries.
- Add lemon zest to the cheesecake filling for a citrus twist.
