Description

Puff Pastry Strawberry Cheesecake is a light, flaky dessert filled with creamy cheesecake and topped with sweet, fresh strawberries. Elegant, easy, and delicious, it’s perfect for brunch, holidays, or anytime you want to impress.


Ingredients

  • 1 sheet puff pastry, thawed
  • 4 oz cream cheese, softened
  • 2 tbsp granulated sugar
  • 1/2 tsp vanilla extract
  • 1 egg yolk
  • 1 cup fresh strawberries, sliced
  • 2 tbsp strawberry jam or preserves (optional, for glaze)
  • Powdered sugar, for garnish

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. Roll out puff pastry slightly and cut into 6 rectangles or squares. Place on baking sheet.
  3. Score a smaller rectangle inside each piece and poke the center with a fork.
  4. Bake for 12–15 minutes until golden and puffed.
  5. While baking, beat cream cheese, sugar, vanilla, and egg yolk until smooth.
  6. Remove pastries from oven, gently press down centers, and let cool slightly.
  7. Spoon cheesecake filling into centers and bake for another 6–8 minutes until set.
  8. Cool completely, then top with sliced strawberries.
  9. Warm jam and brush over strawberries if using for glaze.
  10. Dust with powdered sugar before serving.
