Description

Pioneer Woman Chicken Rice Casserole is a comforting, creamy dish made with shredded chicken, tender rice, a rich sauce, and melty cheese. It’s an easy weeknight meal inspired by homestyle flavors everyone loves.


Ingredients

  • 3 cups shredded cooked chicken (rotisserie works great)
  • 3 cups cooked white rice
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream or plain Greek yogurt
  • 1/2 cup chicken broth
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 1/2 cups shredded cheddar cheese
  • 1 tbsp butter or olive oil
  • Salt and pepper, to taste
  • Optional: chopped parsley, paprika, or crushed crackers for topping

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a skillet, heat butter or oil and sauté the onion until softened. Add garlic and cook for 1 more minute.
  3. In a large bowl, combine cooked rice, shredded chicken, sautéed onion and garlic, cream of chicken soup, sour cream, chicken broth, salt, and pepper. Mix well.
  4. Spread the mixture evenly into the prepared baking dish. Top with shredded cheddar cheese.
  5. Cover with foil and bake for 20 minutes. Uncover and bake for another 10–15 minutes, until the cheese is bubbly and slightly golden.
  6. Garnish with parsley or a sprinkle of paprika before serving, if desired.

Notes

  • Add frozen peas, broccoli, or mixed vegetables for a complete meal.
  • Swap white rice for brown or wild rice for more texture.
  • Include mushrooms or diced bell peppers for extra flavor.
  • Top with crushed Ritz crackers or fried onions for a crunchy finish.
  • Make ahead and refrigerate, then bake when ready to serve.
