Ingredients
- For the meringue shells:
- 3 large egg whites (room temperature)
- ¾ cup granulated sugar
- ¼ tsp cream of tartar (or a pinch of salt)
- ½ tsp rosewater (plus extra if desired)
- Optional: a drop of pink food coloring
- For the pistachio‑rose filling:
- ½ cup unsalted butter, softened
- 1 cup powdered sugar
- ½ cup finely ground pistachios
- ½ tsp rosewater (adjust to taste)
- 1–2 tbsp heavy cream or milk (to reach piping consistency)
- Optional garnish:
- Crushed pistachios
- Dried rose petals
- Edible gold leaf
Instructions
- Preheat oven to 225°F (110°C). Line two baking sheets with parchment paper.
- Beat egg whites with cream of tartar until soft peaks form. Gradually add sugar and whip until stiff, glossy peaks.
- Add rosewater and food coloring (if using) and gently mix.
- Pipe small rounds of meringue (about 1½ inches) onto prepared sheets. Bake for ~1.5 hours. Turn off oven and leave meringues inside to cool completely.
- Meanwhile prepare the filling: beat butter until creamy. Mix in powdered sugar and ground pistachios until smooth. Add rosewater and enough cream or milk to achieve a spreadable or pipeable texture. Chill if needed.
- Pair meringue shells of similar size. Pipe or spread filling onto one side, then gentle press the matching shell on top.
- Optionally roll edges in crushed pistachios, sprinkle with rose petals, or accent with edible gold leaf for decoration.
Notes
- Prepare meringue shells ahead—they store well in an airtight container for several days in a cool, dry place.
- For variation, try orange blossom water or add a bit of white chocolate ganache for richer filling.
- Grind pistachios finely (not pasty) for best texture.
- Avoid humidity—store in a dry spot to keep shells crisp.
- Assemble just before serving to preserve texture.
