Description

Peanut Butter Lunch Lady Cookie Bars are soft, chewy dessert bars filled with rich peanut butter flavor and topped with a creamy glaze. Inspired by classic cafeteria treats, these nostalgic bars are easy to make and totally irresistible.


Ingredients

  • For the bars:
  • 1/2 cup unsalted butter, softened
  • 1 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • For the glaze:
  • 1/2 cup creamy peanut butter
  • 1/4 cup butter
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 1 1/2 cups powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C) and grease or line a 9×13-inch pan with parchment paper.
  2. Cream together butter, peanut butter, granulated sugar, and brown sugar until fluffy.
  3. Beat in eggs and vanilla until smooth.
  4. In a separate bowl, whisk flour, baking powder, and salt. Gradually add to wet ingredients and mix until just combined.
  5. Spread dough evenly into prepared pan and bake for 22–26 minutes, until edges are set and center looks soft but not jiggly.
  6. For glaze: melt peanut butter and butter together. Stir in milk and vanilla, then mix in powdered sugar until smooth.
  7. Pour warm glaze over hot bars and spread evenly.
  8. Let bars cool completely before slicing for clean cuts.
