Light and fluffy peach-flavored cupcakes inspired by the classic Bellini, topped with a delicate peach buttercream for a fresh and elegant dessert.
Ingredients
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 eggs
- 1 tsp vanilla extract
- 1/2 cup peach puree or finely chopped peaches
- 1/2 cup milk
- For the frosting:
- 1/2 cup butter, softened
- 2 cups powdered sugar
- 2–3 tbsp peach puree
- 1/2 tsp vanilla extract
- Optional: sparkling sugar
- Optional: fresh peach slices for garnish
Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a bowl, whisk together flour, baking powder, and salt.
- In another bowl, cream butter and sugar until light and fluffy.
- Beat in eggs one at a time, then add vanilla extract.
- Mix in peach puree until combined.
- Gradually add dry ingredients alternately with milk, mixing until smooth.
- Divide batter evenly into cupcake liners.
- Bake for 18–22 minutes or until a toothpick inserted comes out clean.
- Cool completely before frosting.
- For frosting, beat butter until smooth, then gradually add powdered sugar, peach puree, and vanilla until creamy.
- Frost cupcakes and garnish with sparkling sugar or fresh peach slices if desired.
Notes
- Use ripe peaches for the best natural flavor.
- Drain canned peaches well before using.
- Add small peach chunks for extra texture.
- A splash of sparkling juice can enhance the Bellini-inspired flavor.
- Store in the fridge but bring to room temperature before serving.
