Ingredients

  • 1 pre-baked 9-inch pie crust
  • 1 cup granulated sugar (filling)
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 4 large egg yolks
  • 2 1/2 cups whole milk
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract (filling)
  • 4 large egg whites (room temperature)
  • 1/2 cup granulated sugar (meringue)
  • 1/4 teaspoon cream of tartar
  • 1/2 teaspoon vanilla extract (meringue)

Instructions

  1. Pre-bake the pie crust according to package or recipe directions and let it cool completely.
  2. In a medium saucepan, whisk together 1 cup sugar, cocoa, cornstarch, and salt.
  3. Whisk in egg yolks and milk. Cook over medium heat, stirring constantly, until the mixture thickens and bubbles.
  4. Remove from heat and stir in butter and 1 teaspoon vanilla extract until smooth.
  5. Pour the chocolate filling into the cooled crust and smooth the top.
  6. For the meringue, beat egg whites and cream of tartar until soft peaks form. Gradually add 1/2 cup sugar, beating to stiff, glossy peaks. Add vanilla extract.
  7. Spread meringue over the warm filling, sealing it to the crust edges.
  8. Bake at 350°F (175°C) for 10–15 minutes until the meringue is golden brown.
  9. Cool at room temperature, then chill for at least 2 hours before serving.

Notes

  • Add a pinch of espresso powder to deepen the chocolate flavor.
  • Use dark chocolate or bittersweet chocolate for a richer pie.
  • Replace cream of tartar with lemon juice or vinegar if needed.
