Description

These Oatmeal Raisin Cookie Bars are chewy and packed with oats, plump raisins, and warm spices—all baked into a convenient, sliceable bar. They’re comforting, nostalgic, and perfect for snacks, lunchboxes, or a sweet treat with your coffee.


Ingredients

  • 1 cup unsalted butter, melted and slightly cooled
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 1/2 cups rolled oats
  • 1 tsp ground cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup raisins
  • Optional: 1/2 cup chopped nuts or chocolate chips

Instructions

  1. Preheat the oven to 350 °F (175 °C) and line a 9×13-inch baking pan with parchment or grease lightly.
  2. Whisk together melted butter, brown sugar, and granulated sugar in a bowl. Beat in eggs and vanilla until smooth.
  3. In another bowl, whisk together flour, oats, cinnamon, baking soda, and salt.
  4. Fold dry mixture into wet ingredients until nearly combined, then stir in raisins and any optional mix-ins.
  5. Press dough evenly into the prepared pan, spreading to the corners.
  6. Bake for 20–25 minutes, until edges are golden and center is just set.
  7. Cool completely in the pan. Lift out using parchment and slice into bars once firm.

Notes

  • Use quick oats for a softer texture if needed.
  • For a firmer slice, cool completely before cutting.
  • Microwave a bar for 5 seconds to re-soften if stored.
  • Freeze wrapped bars for up to 2 months.
