These Oatmeal Raisin Cookie Bars are chewy and packed with oats, plump raisins, and warm spices—all baked into a convenient, sliceable bar. They’re comforting, nostalgic, and perfect for snacks, lunchboxes, or a sweet treat with your coffee.
Ingredients
- 1 cup unsalted butter, melted and slightly cooled
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 2 1/2 cups rolled oats
- 1 tsp ground cinnamon
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup raisins
- Optional: 1/2 cup chopped nuts or chocolate chips
Instructions
- Preheat the oven to 350 °F (175 °C) and line a 9×13-inch baking pan with parchment or grease lightly.
- Whisk together melted butter, brown sugar, and granulated sugar in a bowl. Beat in eggs and vanilla until smooth.
- In another bowl, whisk together flour, oats, cinnamon, baking soda, and salt.
- Fold dry mixture into wet ingredients until nearly combined, then stir in raisins and any optional mix-ins.
- Press dough evenly into the prepared pan, spreading to the corners.
- Bake for 20–25 minutes, until edges are golden and center is just set.
- Cool completely in the pan. Lift out using parchment and slice into bars once firm.
Notes
- Use quick oats for a softer texture if needed.
- For a firmer slice, cool completely before cutting.
- Microwave a bar for 5 seconds to re-soften if stored.
- Freeze wrapped bars for up to 2 months.
