Description

Fudgy, protein-packed brownie bites made with cottage cheese, oats, cocoa powder, and natural sweeteners. Perfect for a healthy snack, post-workout treat, or meal prep staple.


Ingredients

  • 1 cup cottage cheese
  • 1 1/2 cups rolled oats
  • 1/2 cup cocoa powder
  • 2 large eggs
  • 1/3 cup maple syrup or honey
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • Optional: 1/3 cup chocolate chips, chopped nuts, or dark chocolate chunks for topping

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a mini muffin pan.
  2. In a blender or food processor, combine cottage cheese, oats, cocoa powder, eggs, maple syrup (or honey), baking powder, vanilla, and salt. Blend until smooth.
  3. Pour batter into mini muffin cups, filling each about 3/4 full.
  4. Top with chocolate chips or nuts if desired.
  5. Bake for 15–18 minutes, until centers are just set and a toothpick comes out mostly clean.
  6. Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • For extra richness, blend in 1–2 tbsp peanut butter or almond butter.
  • Swap maple syrup for mashed ripe banana to reduce added sugar.
  • Add a scoop of chocolate or vanilla protein powder for a higher-protein version.
  • These bites freeze well—store in an airtight bag for up to 2 months.
