Description
Fudgy, protein-packed brownie bites made with cottage cheese, oats, cocoa powder, and natural sweeteners. Perfect for a healthy snack, post-workout treat, or meal prep staple.
Ingredients
- 1 cup cottage cheese
- 1 1/2 cups rolled oats
- 1/2 cup cocoa powder
- 2 large eggs
- 1/3 cup maple syrup or honey
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1/4 tsp salt
- Optional: 1/3 cup chocolate chips, chopped nuts, or dark chocolate chunks for topping
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a mini muffin pan.
- In a blender or food processor, combine cottage cheese, oats, cocoa powder, eggs, maple syrup (or honey), baking powder, vanilla, and salt. Blend until smooth.
- Pour batter into mini muffin cups, filling each about 3/4 full.
- Top with chocolate chips or nuts if desired.
- Bake for 15–18 minutes, until centers are just set and a toothpick comes out mostly clean.
- Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- For extra richness, blend in 1–2 tbsp peanut butter or almond butter.
- Swap maple syrup for mashed ripe banana to reduce added sugar.
- Add a scoop of chocolate or vanilla protein powder for a higher-protein version.
- These bites freeze well—store in an airtight bag for up to 2 months.
