Ingredients
- 1 cup rolled oats
- 1/2 cup peanut butter (or any nut butter)
- 1/4 cup honey or maple syrup
- 1/4 cup ground flaxseed (optional, for added fiber and omega-3s)
- 1/2 tsp vanilla extract
- Pinch of salt
- Optional: chocolate chips, raisins, or shredded coconut
Instructions
- In a large mixing bowl, combine the rolled oats, peanut butter, honey (or maple syrup), flaxseed, vanilla extract, and salt.
- Mix everything together until fully combined. The mixture should be thick and sticky.
- If desired, stir in chocolate chips, raisins, or shredded coconut for extra flavor and texture.
- Roll the mixture into small bite-sized balls (about 1 inch in diameter) using your hands or a spoon.
- Place the cookie balls on a parchment-lined baking sheet or plate and refrigerate for at least 30 minutes to firm up.
- Once set, transfer the cookie balls to an airtight container and store in the fridge.
Notes
- This recipe makes about 12–15 cookie balls.
- For a sweeter treat, add mini chocolate chips or dried fruit like raisins or cranberries.
- Substitute peanut butter with almond butter, cashew butter, or sunflower seed butter for different flavors.
- Add cinnamon or cocoa powder for a spicy or chocolatey twist.
- Store in the fridge for up to 1 week, or freeze for up to 3 months. Thaw in the fridge before eating.
