Ingredients
- 4 salmon fillets
- 1.5 lbs baby potatoes or Yukon gold potatoes, halved
- 1 bunch asparagus, trimmed
- 4 tbsp butter
- 3 garlic cloves, minced
- 2 tbsp olive oil
- 1/4 cup grated Parmesan cheese
- 2 tbsp lemon juice
- Salt and pepper to taste
- 2 tbsp chopped fresh parsley (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Toss halved potatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20 minutes.
- Meanwhile, melt butter and combine with minced garlic and lemon juice.
- Add salmon fillets to the baking sheet. Brush with garlic butter and season with salt and pepper.
- Place asparagus on the sheet, drizzle with olive oil, sprinkle with salt, and top with Parmesan cheese.
- Return the sheet to the oven and roast for 12–15 more minutes, until salmon flakes easily and potatoes are tender.
- Garnish with fresh parsley and an extra squeeze of lemon juice. Serve warm.
