Description

A bold and creamy Mexican-inspired chicken dish, featuring seasoned chicken breasts smothered in a smooth, cheesy sauce—perfect over rice or tucked into tortillas for an easy and delicious meal.


Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and black pepper to taste
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 1/2 cups milk
  • 1 1/2 cups shredded cheddar or Mexican blend cheese
  • Optional: 1/4 cup diced green chiles or jalapeños, paprika for extra flavor

Instructions

  1. Season both sides of the chicken with chili powder, cumin, garlic powder, onion powder, salt, and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Sear chicken for 5–7 minutes per side until golden and cooked through. Remove and set aside.
  3. In the same skillet, melt butter and whisk in flour to make a roux. Cook for 1–2 minutes until lightly golden.
  4. Gradually whisk in milk, stirring constantly until the sauce thickens.
  5. Reduce heat and stir in shredded cheese until melted and smooth. Add green chiles or jalapeños if using.
  6. Return the chicken to the skillet or spoon cheese sauce over chicken when serving.
  7. Garnish with chopped cilantro or green onions, and serve hot.
