Ingredients
- 20 oz cheese tortellini (fresh or refrigerated)
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1/2 cup chicken or vegetable broth
- 3/4 cup grated Parmesan cheese
- 1/2 tsp crushed red pepper flakes (optional)
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- Fresh basil or parsley, chopped (optional, for garnish)
Instructions
- Bring a pot of salted water to a boil and cook the tortellini until tender. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Sauté garlic and sun-dried tomatoes until fragrant, about 1–2 minutes.
- Add heavy cream and broth to the skillet. Stir in Italian seasoning, red pepper flakes (if using), and Parmesan cheese.
- Simmer the sauce for 3–5 minutes until thickened and creamy.
- Add the cooked tortellini and toss gently to coat in the sauce.
- Season with salt and pepper to taste. Garnish with fresh basil or parsley if desired, and serve warm.
Notes
- Use vegetable broth and vegetarian tortellini to keep the dish vegetarian.
- Add cooked chicken, sausage, or shrimp for extra protein.
- Stir in baby spinach or kale at the end for more greens.
- Use coconut cream and nutritional yeast for a dairy-free version.
- Reheat gently with a splash of broth or milk to revive the sauce.
