Description

Marry Me Tortellini is a rich, creamy pasta dish featuring cheesy tortellini tossed in a luxurious sun-dried tomato and Parmesan cream sauce. It’s quick to make yet elegant enough to impress on a date night or special dinner.


Ingredients

  • 20 oz cheese tortellini (fresh or refrigerated)
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup chicken or vegetable broth
  • 3/4 cup grated Parmesan cheese
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • Fresh basil or parsley, chopped (optional, for garnish)

Instructions

  1. Bring a pot of salted water to a boil and cook the tortellini until tender. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Sauté garlic and sun-dried tomatoes until fragrant, about 1–2 minutes.
  3. Add heavy cream and broth to the skillet. Stir in Italian seasoning, red pepper flakes (if using), and Parmesan cheese.
  4. Simmer the sauce for 3–5 minutes until thickened and creamy.
  5. Add the cooked tortellini and toss gently to coat in the sauce.
  6. Season with salt and pepper to taste. Garnish with fresh basil or parsley if desired, and serve warm.

Notes

  • Use vegetable broth and vegetarian tortellini to keep the dish vegetarian.
  • Add cooked chicken, sausage, or shrimp for extra protein.
  • Stir in baby spinach or kale at the end for more greens.
