Description

Marry Me Shrimp Pasta is a rich and creamy pasta dish featuring tender shrimp, garlic, sun-dried tomatoes, and a luxurious cream sauce. It’s flavorful, comforting, and perfect for weeknight dinners or special occasions.

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 8 oz pasta (linguine, fettuccine, or spaghetti)
  • 2 tablespoons olive oil, divided
  • 4 cloves garlic, minced
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • 1 tablespoon lemon juice
  • 1/4 cup fresh basil, chopped (for garnish)

Instructions

  1. Cook pasta in salted boiling water according to package directions. Reserve 1/2 cup pasta water, then drain and set aside.
  2. Season shrimp with salt and pepper. Heat 1 tablespoon olive oil in a skillet over medium-high heat. Cook shrimp 2-3 minutes per side until pink and cooked through. Remove and set aside.
  3. Add remaining olive oil to the skillet. Sauté garlic for 30 seconds, then add red pepper flakes and sun-dried tomatoes. Cook 1-2 minutes.
  4. Stir in chicken broth, bring to a simmer and reduce slightly (2-3 minutes). Add cream, Parmesan, and lemon juice. Simmer 4-5 minutes until thickened.
  5. Return shrimp and pasta to skillet. Toss to combine and coat with sauce. Add reserved pasta water if needed to loosen the sauce.
  6. Adjust seasoning with salt and pepper. Garnish with fresh basil and serve immediately.

Notes

  • Add extra heat with more red pepper flakes or hot sauce.
  • Substitute shrimp with mushrooms or grilled chicken for variation.
  • Include lemon zest for extra brightness.
  • Add crispy bacon bits for crunch and smoky flavor.
  • Use dairy-free cream and cheese for a dairy-free version.
