Description

Marry Me Chicken is a romantic one-pan dish featuring pan-seared chicken in a creamy sun-dried tomato, garlic, and Parmesan sauce. It’s rich, flavorful, and impressively easy—a perfect weeknight or date-night meal.


Ingredients

  • 4 boneless skinless chicken breasts or thighs
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes packed in oil, chopped
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning (or mixture of dried thyme and oregano)
  • 1/4 tsp red pepper flakes (optional)
  • Salt and black pepper to taste
  • 2 tbsp fresh basil or parsley, chopped (for garnish)

Instructions

  1. Season chicken with salt and pepper. In a large skillet over medium-high heat, warm olive oil and sear chicken 4–5 minutes per side until golden and cooked through. Transfer to a plate and cover to keep warm.
  2. In the same skillet, add garlic and sauté for ~30 seconds until fragrant. Add chopped sun-dried tomatoes and stir.
  3. Pour in chicken broth and let it reduce slightly (~1–2 minutes).
  4. Stir in heavy cream, Parmesan, Italian seasoning, and red pepper flakes. Whisk continuously until sauce thickens (~3–5 minutes).
  5. Return chicken to skillet, spoon sauce over it, and simmer for 2–3 more minutes to marry flavors.
  6. Sprinkle chopped basil or parsley on top and serve hot, alongside pasta, mashed potatoes, or crusty bread.

Notes

  • Use chicken thighs for richer, juicier results.
  • Swap heavy cream for half-and-half or coconut milk for a lighter or dairy-free version.
  • Stir in spinach or kale at the end for added greens.
  • Add a splash of white wine before the broth for more flavor depth.
