Description

Low-Carb French Toast Egg Loaf is a rich, custard-like baked breakfast made from eggs, cream cheese, butter, and vanilla. Toasted and topped with sugar-free syrup, it’s a keto- and diabetic-friendly twist on classic French toast.


Ingredients

  • 8 eggs
  • 8 oz cream cheese, softened
  • 4 teaspoons butter, softened
  • 12 teaspoons vanilla extract
  • Optional: sugar-free maple syrup, ground cinnamon, fresh berries, whipped cream (sugar-free)

Instructions

  1. Preheat oven to 375°F and grease or line a loaf pan.
  2. Blend eggs, cream cheese, butter, and vanilla until smooth.
  3. Pour mixture into loaf pan and bake for 45 minutes, until center is set and top is golden.
  4. Cool slightly before removing from pan. Once cooled, slice into thick pieces.
  5. Toast slices in a skillet or toaster until golden. Serve with sugar-free syrup and optional toppings.
