Low-Carb French Toast Egg Loaf is a rich, custard-like baked breakfast made from eggs, cream cheese, butter, and vanilla. Toasted and topped with sugar-free syrup, it’s a keto- and diabetic-friendly twist on classic French toast.
Ingredients
- 8 eggs
- 8 oz cream cheese, softened
- 4 teaspoons butter, softened
- 1–2 teaspoons vanilla extract
- Optional: sugar-free maple syrup, ground cinnamon, fresh berries, whipped cream (sugar-free)
Instructions
- Preheat oven to 375°F and grease or line a loaf pan.
- Blend eggs, cream cheese, butter, and vanilla until smooth.
- Pour mixture into loaf pan and bake for 45 minutes, until center is set and top is golden.
- Cool slightly before removing from pan. Once cooled, slice into thick pieces.
- Toast slices in a skillet or toaster until golden. Serve with sugar-free syrup and optional toppings.

- Full-fat cream cheese gives best texture and flavor.
- Sprinkle cinnamon or nutmeg into batter for added spice.
