Ingredients
- 1 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1/4 tsp salt
- 1 cup plain yogurt (full-fat or Greek-style)
- 3/4 cup granulated sugar
- 2 large eggs
- 1/2 cup vegetable oil or melted butter
- 1 tsp vanilla extract
- Optional: 1 tbsp lemon or orange zest
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9-inch round or loaf pan.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a separate large bowl, mix the yogurt, sugar, eggs, oil (or melted butter), and vanilla extract until smooth.
- Gradually stir the dry ingredients into the wet mixture until just combined. Do not overmix.
- If using, fold in the citrus zest.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 35–40 minutes or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
