Description

Lemon Garlic Shrimp and Asparagus is a quick and flavorful one-pan dish made with juicy shrimp and tender asparagus in a buttery garlic-lemon sauce. It’s light, fresh, and perfect for busy weeknights or elegant dinners alike.

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 2 tbsp olive oil or butter
  • 3 garlic cloves, minced
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 2 tbsp fresh parsley, chopped (optional, for garnish)

Instructions

  1. Heat olive oil or butter in a large skillet over medium heat.
  2. Add asparagus and cook 3–4 minutes, stirring occasionally, until slightly tender.
  3. Add minced garlic and cook for 30 seconds until fragrant.
  4. Push asparagus to the side and add shrimp in a single layer.
  5. Cook shrimp 1–2 minutes per side, until pink and opaque.
  6. Stir in lemon juice, zest, salt, pepper, and red pepper flakes if using.
  7. Toss shrimp and asparagus in the sauce until well coated, then remove from heat.
  8. Garnish with fresh parsley and serve immediately.

Notes

  • Add cherry tomatoes for sweetness and color.
  • Serve over rice, pasta, or quinoa for a heartier meal.
  • For a creamy variation, stir in a splash of heavy cream or sprinkle with Parmesan.
  • Swap asparagus with green beans, zucchini, or broccoli.
  • Store leftovers in the fridge up to 2 days; reheat gently in a skillet to avoid rubbery shrimp.
