Description

Soft and lightly crisp keto apple fritter cookies made with almond flour, warm cinnamon, and a sweet sugar-free glaze for a comforting low-carb treat.


Ingredients

  • 1 1/2 cups almond flour
  • 1/4 cup coconut flour
  • 1/2 cup granulated keto sweetener
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 eggs
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract
  • 1/2 cup finely diced apple
  • 1/4 cup chopped pecans (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix almond flour, coconut flour, granulated keto sweetener, baking powder, cinnamon, and salt.
  3. In another bowl, whisk the eggs, melted butter, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until a thick dough forms.
  5. Fold in the diced apple and chopped pecans if using.
  6. Scoop small portions of dough onto the prepared baking sheet, leaving space between each cookie.
  7. Lightly flatten each cookie with the back of a spoon.
  8. Bake for 12–15 minutes until the edges are lightly golden.
  9. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a rack.
  10. In a small bowl, whisk powdered keto sweetener, almond milk, and vanilla extract to make the glaze.
  11. Drizzle the glaze over the cooled cookies before serving.
