Ingredients
- 1 1/2 cups almond flour
- 1/4 cup coconut flour
- 1/2 cup granulated keto sweetener
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 2 eggs
- 1/4 cup melted butter
- 1 teaspoon vanilla extract
- 1/2 cup finely diced apple
- 1/4 cup chopped pecans (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix almond flour, coconut flour, granulated keto sweetener, baking powder, cinnamon, and salt.
- In another bowl, whisk the eggs, melted butter, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and mix until a thick dough forms.
- Fold in the diced apple and chopped pecans if using.
- Scoop small portions of dough onto the prepared baking sheet, leaving space between each cookie.
- Lightly flatten each cookie with the back of a spoon.
- Bake for 12–15 minutes until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring to a rack.
- In a small bowl, whisk powdered keto sweetener, almond milk, and vanilla extract to make the glaze.
- Drizzle the glaze over the cooled cookies before serving.

- Chopped walnuts can be used instead of pecans.
