Description

Juicy Italian-style chicken cutlets topped with fresh tomatoes, creamy burrata, and fragrant basil, finished with an optional balsamic glaze for a flavorful, elegant meal.

Ingredients

  • 4 chicken cutlets, pounded thin
  • Salt and pepper, to taste
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • 2 tablespoons olive oil or butter for frying
  • 1 cup fresh tomatoes, diced or sliced
  • 4 oz burrata cheese
  • 1/4 cup fresh basil leaves, torn
  • Balsamic glaze, optional, for drizzling

Instructions

  1. Season the chicken cutlets with salt and pepper.
  2. Dredge each cutlet in flour, dip into beaten eggs, and coat with breadcrumbs.
  3. Heat olive oil or butter in a skillet over medium heat.
  4. Cook cutlets 3-4 minutes per side, until golden brown and cooked through.
  5. While the chicken cooks, combine fresh tomatoes, torn basil leaves, and a pinch of salt for the topping.
  6. Once cutlets are done, top each with the tomato mixture and a piece of burrata.
  7. Drizzle with balsamic glaze if desired and serve immediately.

Notes

  • Roast tomatoes for a deeper flavor or add garlic/red pepper flakes to the topping.
  • Swap burrata for fresh mozzarella for a lighter option.
  • Bake the cutlets instead of frying for a healthier version.
  • Pair with pasta tossed in olive oil, a green salad, or crusty bread.
  • Store chicken and toppings separately in the fridge for up to 2 days; add toppings fresh when serving.
