Description
Juicy Italian-style chicken cutlets topped with fresh tomatoes, creamy burrata, and fragrant basil, finished with an optional balsamic glaze for a flavorful, elegant meal.
Ingredients
- 4 chicken cutlets, pounded thin
- Salt and pepper, to taste
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1 cup breadcrumbs
- 2 tablespoons olive oil or butter for frying
- 1 cup fresh tomatoes, diced or sliced
- 4 oz burrata cheese
- 1/4 cup fresh basil leaves, torn
- Balsamic glaze, optional, for drizzling
Instructions
- Season the chicken cutlets with salt and pepper.
- Dredge each cutlet in flour, dip into beaten eggs, and coat with breadcrumbs.
- Heat olive oil or butter in a skillet over medium heat.
- Cook cutlets 3-4 minutes per side, until golden brown and cooked through.
- While the chicken cooks, combine fresh tomatoes, torn basil leaves, and a pinch of salt for the topping.
- Once cutlets are done, top each with the tomato mixture and a piece of burrata.
- Drizzle with balsamic glaze if desired and serve immediately.
Notes
- Roast tomatoes for a deeper flavor or add garlic/red pepper flakes to the topping.
- Swap burrata for fresh mozzarella for a lighter option.
- Bake the cutlets instead of frying for a healthier version.
- Pair with pasta tossed in olive oil, a green salad, or crusty bread.
- Store chicken and toppings separately in the fridge for up to 2 days; add toppings fresh when serving.
