Description

Irresistible Divorce Salad is a fresh, crunchy chopped salad made with romaine lettuce, cucumbers, red onion, and feta tossed in a zesty lemon vinaigrette. It’s quick, energizing, and perfect as a side or light main dish.


Ingredients

  • 1 large head romaine lettuce, finely chopped
  • 2 Persian or 1 English cucumber, diced
  • 1/4 red onion, finely diced
  • 1/2 cup crumbled feta cheese
  • 1 tbsp fresh dill or parsley, chopped (optional)
  • For the dressing:
  • 1/4 cup olive oil
  • 2 tbsp lemon juice (freshly squeezed)
  • 1 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 clove garlic, grated or minced
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Finely chop romaine lettuce, dice cucumbers, and finely dice red onion.
  2. In a large mixing bowl, combine chopped vegetables with crumbled feta and herbs (if using).
  3. In a small jar or bowl, whisk together olive oil, lemon juice, red wine vinegar, Dijon mustard, garlic, salt, and pepper until well emulsified.
  4. Pour dressing over the salad and toss thoroughly to coat all ingredients evenly.
  5. Let sit for 5–10 minutes to allow the flavors to meld and the lettuce to slightly soften.
  6. Serve immediately.
