Ingredients

  • ½ cup unsalted butter, melted
  • 1 cup granulated sugar
  • ¼ cup brown sugar
  • 2 large eggs
  • 1 tablespoon red food coloring
  • 1 teaspoon vanilla extract
  • ½ teaspoon white vinegar
  • ¼ cup unsweetened cocoa powder
  • ¾ cup all-purpose flour
  • ¼ teaspoon salt
  • Optional cream cheese swirl:
  • 4 oz cream cheese, softened
  • 2 tablespoons sugar
  • 1 egg yolk
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment, leaving overhang for easy removal.
  2. In a large bowl, whisk melted butter, granulated sugar, and brown sugar until smooth.
  3. Add eggs, red food coloring, vanilla, and vinegar; whisk until fully combined and creamy.
  4. Sift in cocoa powder, flour, and salt. Stir gently until just combined—do not overmix.
  5. Pour batter into the prepared pan and smooth the top.
  6. For the cream cheese swirl (if using): beat cream cheese, sugar, egg yolk, and vanilla until smooth. Drop spoonfuls on top of the batter and swirl with a knife.
  7. Bake for 28–32 minutes, or until a toothpick inserted comes out with a few moist crumbs.
  8. Cool completely in the pan, then lift out and slice into squares.
